Gyokuro, a premium grade of Japanese shade-grown green tea, is a delicious base for this experiment because of its sensitivity to temperature variations and rich umami quality. Learn how the tea's flavor and body change at high temperature, room temperature, and after a slow steep under melting ice ('Shinobi' style).
