Tea making is a time-perfected art; it represents some of finest understandings we humans have of nature.
Over 1500 years ago, we first unlocked the endless possibilities of subtleties the compound and enzyme rich tea plant can yield.
This has been done through the manipulation of heat and moisture which allowed the heritage farmers of China to develop sophisticated techniques that give us mature definitions of at least 6 distinct tea categories. In this session Shunan will dive into what distinguishes each category of tea in their processing style.
Tea making is subtle and resolute, a small variation of the condition, an extra disturbance of the leaves, could all result in tastable change in a tea’s quality.
